- In a bowl, mix the Greek yogurt, almond milk, chia seeds, honey (if using), and vanilla extract until well combined.
- Let the mixture sit for about 10 minutes, then stir again to prevent clumping of the chia seeds.
- Cover and refrigerate for at least 2 hours or overnight until it thickens.
Serving
- Serve in bowls or jars and top with fresh fruit or nuts if desired.
Notes
Store any leftover pudding in an airtight container in the refrigerator for about 3 to 5 days. Stir in more almond milk if it thickens too much.
