  • 2 cups Greek yogurt
  • 1/2 cup chia seeds
  • 2 cups almond milk (or any milk of choice)
  • 1-2 tablespoons honey or maple syrup (optional for sweetness) Adjust based on taste.
  • 1 teaspoon vanilla extract
Toppings (optional)
  • Fresh fruit or nuts Choose your favorites.

Method
 

Preparation
  1. In a bowl, mix the Greek yogurt, almond milk, chia seeds, honey (if using), and vanilla extract until well combined.
  2. Let the mixture sit for about 10 minutes, then stir again to prevent clumping of the chia seeds.
  3. Cover and refrigerate for at least 2 hours or overnight until it thickens.
Serving
  1. Serve in bowls or jars and top with fresh fruit or nuts if desired.

Notes

Store any leftover pudding in an airtight container in the refrigerator for about 3 to 5 days. Stir in more almond milk if it thickens too much.
