Ingredients
  

For the Chicken Patties
  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1/4 cup red onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil for cooking
For the Tzatziki
  • 1 cup Greek yogurt
  • 1/2 cup cucumber, grated and drained drain well to avoid a watery tzatziki
  • 1 clove garlic, minced
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon lemon juice
For the Cucumber Salad
  • 2 cucumbers sliced
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar

Method
 

Preparation
  1. In a bowl, combine ground chicken, breadcrumbs, egg, red onion, garlic, parsley, oregano, cumin, salt, and pepper until just mixed.
  2. Form the mixture into eight equal patties.
Cooking
  1. Heat two tablespoons of olive oil in a skillet over medium heat and cook patties for four to five minutes per side until golden and cooked through.
Make Tzatziki
  1. In another bowl, combine Greek yogurt, grated and drained cucumber, garlic, dill, lemon juice, salt, and pepper. Stir well and refrigerate.
Create the Salad
  1. In a separate bowl, toss sliced cucumbers and thinly sliced red onion with olive oil, red wine vinegar, and a pinch of salt and pepper.
Serve
  1. Serve chicken patties topped with tzatziki alongside the cucumber salad.

Notes

Make sure to drain the cucumber well before adding it to the tzatziki. You can prep the patties a day ahead and store them in the fridge wrapped in plastic. These patties keep well in the fridge for about 3-4 days. You can freeze the cooked patties for up to 3 months.
