Preparation
- In a bowl, combine ground chicken, breadcrumbs, egg, red onion, garlic, parsley, oregano, cumin, salt, and pepper until just mixed.
- Form the mixture into eight equal patties.
Cooking
- Heat two tablespoons of olive oil in a skillet over medium heat and cook patties for four to five minutes per side until golden and cooked through.
Make Tzatziki
- In another bowl, combine Greek yogurt, grated and drained cucumber, garlic, dill, lemon juice, salt, and pepper. Stir well and refrigerate.
Create the Salad
- In a separate bowl, toss sliced cucumbers and thinly sliced red onion with olive oil, red wine vinegar, and a pinch of salt and pepper.
Serve
- Serve chicken patties topped with tzatziki alongside the cucumber salad.
Notes
Make sure to drain the cucumber well before adding it to the tzatziki. You can prep the patties a day ahead and store them in the fridge wrapped in plastic. These patties keep well in the fridge for about 3-4 days. You can freeze the cooked patties for up to 3 months.
