Preparation
- Preheat your oven to 350°F and line an 8 by 8 inch baking pan with parchment paper.
- In a bowl, whisk together the gluten-free flour, cornstarch, salt, and baking powder until combined.
- In a separate bowl, beat the eggs and granulated sugar until pale and slightly thickened.
- Stir in the melted butter, lemon zest, lemon juice, and vanilla extract into the egg mixture.
- Fold the wet ingredients into the dry mixture until just combined. No overmixing, please!
Baking
- Pour the batter into the prepared pan and smooth the surface with a spatula.
- Bake for 20 to 25 minutes, until the center is set but still slightly fudgy.
- Allow the brownies to cool completely in the pan before lifting them out with the parchment paper.
Serving
- Dust with confectioners’ sugar if desired, then cut into squares.
Notes
For a different flavor vibe, use lime zest instead of lemon. You can also make them vegan by substituting eggs with flax eggs and using plant-based butter.
