Ingredients
  

Dry Ingredients
  • 1 cup gluten-free all-purpose flour
  • 1/2 cup cornstarch
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
Wet Ingredients
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup unsalted butter (melted)
  • 2 tablespoons lemon zest
  • 1/4 cup fresh lemon juice
  • 1 teaspoon vanilla extract
Optional Topping
  • 1 tablespoon confectioners’ sugar for dusting

Method
 

Preparation
  1. Preheat your oven to 350°F and line an 8 by 8 inch baking pan with parchment paper.
  2. In a bowl, whisk together the gluten-free flour, cornstarch, salt, and baking powder until combined.
  3. In a separate bowl, beat the eggs and granulated sugar until pale and slightly thickened.
  4. Stir in the melted butter, lemon zest, lemon juice, and vanilla extract into the egg mixture.
  5. Fold the wet ingredients into the dry mixture until just combined. No overmixing, please!
Baking
  1. Pour the batter into the prepared pan and smooth the surface with a spatula.
  2. Bake for 20 to 25 minutes, until the center is set but still slightly fudgy.
  3. Allow the brownies to cool completely in the pan before lifting them out with the parchment paper.
Serving
  1. Dust with confectioners’ sugar if desired, then cut into squares.

Notes

For a different flavor vibe, use lime zest instead of lemon. You can also make them vegan by substituting eggs with flax eggs and using plant-based butter.
