Ingredients
  

For the Filling
  • 8 ounces feta cheese, crumbled Use fresh feta for best flavor.
  • 2 tablespoons fresh chopped dill Fresh herbs enhance the taste.
  • 1 clove garlic, grated Use fresh garlic for strong flavor.
  • 1-2 teaspoons chili flakes Adjust to taste for spice level.
  • 1/2 teaspoon cumin seed Adds a warm spice flavor.
For the Rolls
  • 16-20 sheets frozen phyllo dough, thawed Ensure completely thawed for easy handling.
  • 1 tablespoon extra virgin olive oil Plus more for brushing.
  • 1 tablespoon salted butter Melted, for brushing.
  • 1/3 cup honey For drizzling when serving.

Method
 

Preparation
  1. In a bowl, combine crumbled feta cheese, chopped dill, grated garlic, chili flakes, and cumin seeds.
  2. Lay out the phyllo dough on a clean surface. Brush a sheet with olive oil and place a spoonful of the cheese filling at one end of the dough.
  3. Fold in the sides of the phyllo dough and roll it tightly to enclose the filling.
  4. Repeat this process for the remaining sheets and filling.
Cooking
  1. Heat a bit of olive oil in a pan over medium heat.
  2. Fry the rolls until they are golden brown, about 3-4 minutes.
  3. Once done, drain them on paper towels and serve warm.

Notes

For best results, keep a damp cloth over the phyllo sheets while working to prevent them from drying out. You can customize the filling by adding ingredients like spinach, sun-dried tomatoes, or different cheeses.
