Ingredients
  

Dry Ingredients
  • 2 cups gluten free all-purpose flour blend
  • 1 tablespoon baking powder
  • 1 teaspoon xanthan gum
  • 1 teaspoon salt
  • 1 tablespoon sugar
Wet Ingredients
  • 1 1/4 cups milk
  • 2 large eggs
  • 1/4 cup melted butter
  • 1 teaspoon apple cider vinegar

Preparation
  1. Preheat the oven to 350°F and grease a 9×5 inch loaf pan.
  2. In a large bowl, whisk together the flour blend, baking powder, xanthan gum, salt, and sugar.
  3. In another bowl, beat the eggs, then whisk in the milk, melted butter, and apple cider vinegar.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined without overmixing.
  5. Transfer the batter into the prepared loaf pan and smooth the top.
  6. Bake for 35 to 45 minutes, or until a toothpick inserted in the center comes out clean.
  7. Remove from the oven and let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Let the bread cool before slicing for perfect slices. Store in an airtight container for up to 3 days. For variations, mix in herbs, cheese, or chocolate chips.
