Main Ingredients
  • 1 lb Chicken breast Cut into bite-sized pieces
  • 2 cups Street corn Grilled or sautéed
  • 1 cup Bell peppers Chopped, any color
  • 1 medium Red onion Chopped
  • 2 cups Lettuce Chopped, for layering
  • 1 medium Avocado Diced
  • 1 each Lime Juiced
  • 1/4 cup Cilantro Chopped, for garnish
  • 2 tbsp Olive oil For cooking chicken
  • to taste Salt
  • to taste Pepper

Method
 

Cooking the Chicken
  1. Cook the chicken breast in olive oil over medium heat until fully cooked and golden brown. Season with salt and pepper.
Preparing the Corn and Vegetables
  1. While the chicken is cooking, grill or sauté the street corn until slightly charred.
  2. Chop the bell peppers and red onion. Then, sauté them with the corn for a couple of minutes.
Assembling the Bowls
  1. Prepare the bowl by layering lettuce at the bottom, followed by sliced chicken, street corn mixture, and diced avocado.
  2. Drizzle with lime juice and sprinkle with chopped cilantro.
  3. Serve immediately and enjoy a vibrant meal!

Notes

For an extra kick, consider mixing in some chili powder. Store leftovers in the fridge for up to 3 days, keeping avocado separate to prevent browning.
