- Rinse the quinoa under cold water.

Cooking Chicken
- Meanwhile, heat olive oil in a skillet over medium heat. Season the chicken breasts with salt and pepper.
- Cook the chicken for 6-7 minutes on each side until fully cooked.
- Once cooked, remove the chicken from the skillet and set it aside. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
- Return the chicken to the skillet and pour in the lemon juice. Stir everything together to combine.
Final Steps
- Fluff the quinoa and add it to the skillet, mixing well with the chicken and garlic mixture. Adjust seasoning as needed.
- Garnish with chopped parsley and serve hot.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or stovetop. Add a splash of water or broth while reheating if the quinoa looks dry.
