Ingredients
  

For the Chicken
  • 2 pieces Chicken breasts, boneless and skinless
  • 3 cloves Garlic, minced
  • 1/4 cup Lemon juice, freshly squeezed
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
For the Quinoa
  • 1 cup Quinoa, rinsed Make sure to rinse well to remove bitterness.
  • 2 cups Chicken broth Can be substituted with vegetable broth for a vegetarian version.
  • 1/4 cup Fresh parsley, chopped For garnish.
Optional Add-ins
  • 1/4 teaspoon Red pepper flakes For a bit of heat.
  • 1 cup Cherry tomatoes, halved Optional for added freshness.
  • 2 cups Spinach or kale For added nutrition.

Method
 

Preparation
  1. Rinse the quinoa under cold water.
  2. Combine the rinsed quinoa with chicken broth in a pot. Bring it to a boil, then reduce heat and let it simmer for about 15 minutes until fluffy.
Cooking Chicken
  1. Meanwhile, heat olive oil in a skillet over medium heat. Season the chicken breasts with salt and pepper.
  2. Cook the chicken for 6-7 minutes on each side until fully cooked.
  3. Once cooked, remove the chicken from the skillet and set it aside. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
  4. Return the chicken to the skillet and pour in the lemon juice. Stir everything together to combine.
Final Steps
  1. Fluff the quinoa and add it to the skillet, mixing well with the chicken and garlic mixture. Adjust seasoning as needed.
  2. Garnish with chopped parsley and serve hot.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or stovetop. Add a splash of water or broth while reheating if the quinoa looks dry.
