Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a baking dish, combine the rice, chicken broth, and tzatziki sauce.
  3. Season the chicken breasts with salt and pepper and place them on top of the rice mixture.
  4. Scatter the cherry tomatoes over the chicken.
  5. Cover the dish tightly with foil and bake for 45 minutes.
  6. Remove the foil, sprinkle feta cheese over the top, and return to the oven for an additional 15 minutes, or until the chicken is cooked through and the rice is tender.
  7. Let it rest for a few minutes before serving. Garnish with fresh herbs if desired.

Notes

This dish keeps well in the fridge for up to 3 days and can be frozen for up to 2 months. Reheat in the microwave or oven until warmed through.
