  • 2 cups long grain white rice
  • 4 cups chicken broth Can use low-sodium if desired.
  • 2 pieces boneless, skinless chicken breasts Ensure they are evenly spaced for even cooking.
  • 2 tablespoons olive oil Can marinate chicken in this before baking for extra flavor.
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Tzatziki Sauce Ingredients
  • 1 cup Greek yogurt Can substitute with dairy-free yogurt.
  • 1 cup grated cucumber
  • 2 cloves minced garlic
  • 2 tablespoons dill
  • 2 tablespoons lemon juice
  • 1 teaspoon oregano
  • 1 teaspoon paprika
  • 1 cup cucumber substitute (diced zucchini or bell pepper) For variation.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a baking dish, spread uncooked rice evenly across the bottom.
  3. Place the chicken breasts on top of the rice and pour the chicken broth over everything.
  4. In a separate bowl, mix the Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, salt, black pepper, oregano, and paprika until well combined.
Cooking
  1. Cover the baking dish with foil and bake for 30-35 minutes.
  2. After this time, remove the foil and spread the tzatziki sauce over the chicken.
  3. Bake uncovered for an additional 10 minutes.
  4. Allow the dish to rest for a few minutes before serving.

Notes

Serve warm, garnished with fresh herbs or extra cucumber. Pairs well with salad or warm pita bread. Store leftovers in an airtight container for up to 3 days in the fridge or freeze for up to 2 months.
