Dragon Fruit Mousse Cake

Ingredients
  

For the mousse
  • 1 cup dragon fruit puree
  • 1 cup coconut milk
  • 1/2 cup aquafaba (chickpea brine) Whipped to stiff peaks
  • 1/4 cup maple syrup Adjust sweetness to taste
  • 1 tablespoon gelatin or agar-agar Follow package instructions for agar-agar
  • 1 teaspoon vanilla extract
  • a pinch salt
For the crust (optional)
  • Crushed vegan cookies or nuts Press into the bottom of the cake pan

Method
 

Preparation
  1. If using gelatin, combine it with 1/4 cup of warm water in a small bowl to dissolve. If using agar-agar, follow the package instructions for preparation.
  2. In a separate bowl, mix the dragon fruit puree, coconut milk, maple syrup, and vanilla extract until well combined.
  3. In another bowl, whip the aquafaba until it forms stiff peaks. Gently fold the whipped aquafaba into the dragon fruit mixture.
  4. Add the dissolved gelatin or agar-agar to the fruit mixture and mix until fully incorporated.
  5. If desired, prepare the crust by crushing vegan cookies or nuts and pressing them into the bottom of a cake pan.
  6. Pour the mousse mixture into the prepared pan and refrigerate for at least 4 hours, or until set.
Serving
  1. Serve chilled, garnished with slices of fresh dragon fruit, berries, or a sprinkle of coconut flakes.

Notes

To store the mousse cake, cover it tightly with plastic wrap or store it in an airtight container in the refrigerator for up to 5 days. For longer storage, freezing is possible but may alter the texture. Ensure aquafaba is whipped to stiff peaks for a fluffy texture. Adjust maple syrup based on your sweetness preference.
