  • 1 cup dill pickles, chopped Use fresh for a crunchier texture.
  • 1/2 cup ranch dressing Can substitute with any creamy dressing.
  • 8 small taco shells
  • 1 cup shredded cheese (cheddar or mozzarella) Try pepper jack for a spicy kick.

Method
 

Preparation
  1. In a skillet, heat a bit of oil over medium heat. Add the ground chicken, season with salt and pepper, and cook until browned.
  2. Stir in the chopped dill pickles and ranch dressing until well combined.
  3. In a separate pan, heat the cheese until it melts and forms a crispy lace. Scoop and set aside.
  4. Warm the taco shells in another pan or microwave.
Assembly
  1. Assemble the tacos by filling each shell with the chicken mixture, topping with crispy cheese.
  2. Add optional toppings as desired and serve immediately.

Notes

For longer storage, consider freezing the chicken mixture (without the taco shells) for up to 3 months. Reheat the chicken in a skillet over medium heat until warmed through, and serve with fresh taco shells.
