Preparation
- In a skillet, heat a bit of oil over medium heat. Add the ground chicken, season with salt and pepper, and cook until browned.
- Stir in the chopped dill pickles and ranch dressing until well combined.
- In a separate pan, heat the cheese until it melts and forms a crispy lace. Scoop and set aside.
- Warm the taco shells in another pan or microwave.
Assembly
- Assemble the tacos by filling each shell with the chicken mixture, topping with crispy cheese.
- Add optional toppings as desired and serve immediately.
Notes
For longer storage, consider freezing the chicken mixture (without the taco shells) for up to 3 months. Reheat the chicken in a skillet over medium heat until warmed through, and serve with fresh taco shells.
