Preparation
- Wash and thinly slice the cucumber, then place the slices in a large bowl.
- In a separate small bowl, whisk together olive oil, lemon juice, Dijon mustard, minced garlic, oregano, salt, and pepper until emulsified.
- Toss the thinly sliced red onion and chopped parsley into the cucumbers.
- Pour the vinaigrette over everything and gently toss to coat.
- Sprinkle the crumbled feta cheese over the salad and give it a final light toss.
- Serve immediately or chill in the refrigerator for 10 minutes before serving.
Notes
For a twist, add cherry tomatoes or diced bell peppers. Use a mandoline for even cucumber slices. To make it dairy-free, swap feta with vegan cheese.
