  • 1 large cucumber Wash and thinly slice.
  • 1/2 cup crumbled feta cheese
  • 1/4 cup thinly sliced red onion
  • 2 tablespoons chopped fresh parsley
Lemon Greek Vinaigrette
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Preparation
  1. Wash and thinly slice the cucumber, then place the slices in a large bowl.
  2. In a separate small bowl, whisk together olive oil, lemon juice, Dijon mustard, minced garlic, oregano, salt, and pepper until emulsified.
  3. Toss the thinly sliced red onion and chopped parsley into the cucumbers.
  4. Pour the vinaigrette over everything and gently toss to coat.
  5. Sprinkle the crumbled feta cheese over the salad and give it a final light toss.
  6. Serve immediately or chill in the refrigerator for 10 minutes before serving.

Notes

For a twist, add cherry tomatoes or diced bell peppers. Use a mandoline for even cucumber slices. To make it dairy-free, swap feta with vegan cheese.
