Method
Preparation
- In a bowl, combine lemon juice, olive oil, minced garlic, oregano, thyme, salt, and pepper. Whisk to create your marinade.
- Add the chicken breast to the marinade and coat well. Refrigerate for at least 15 minutes.
Cooking
- Preheat grill to medium-high heat. Place chicken on the grill and cook for 6 to 8 minutes per side until the internal temperature reaches 75°C. Then, remove and let rest for 5 minutes.
- Slice the grilled chicken into thin strips.
Assembly
- In a large bowl, toss chopped romaine lettuce with Caesar dressing.
- Lay a tortilla flat and layer with dressed lettuce, sliced chicken, grated Parmesan, and crushed croutons.
- Roll the tortilla tightly, folding in the sides to enclose the filling.
Crisping
- Heat a skillet over medium heat, melt butter, and place the wrap seam-side down. Cook for 1 to 2 minutes each side until golden and crispy.
- Remove from the skillet, slice in half, and serve immediately.
Notes
These wraps are best enjoyed fresh but can last in the fridge for up to 3 days if stored in an airtight container. Keep dressing and wraps separate until ready to eat. Reheat in a skillet for a few minutes to regain crispiness. Use fresh herbs if possible for a brighter flavor!
