Ingredients
  

Pasta and Chicken
  • 8 oz pasta Any type of pasta can be used.
  • 1 lb chicken breast, diced Ensure it's cut into small, even pieces.
  • 2 tablespoons olive oil
Sauce and Vegetables
  • 1 cup heavy cream For a lighter version, substitute with half-and-half.
  • 1 cup chicken broth
  • 1 tablespoon Cajun seasoning Adjust according to taste.
  • 1 cup bell peppers, sliced Any color bell pepper can be used.
  • 1 cup onion, sliced Yellow or white onions work best.
  • Salt and pepper to taste
Garnish
  • Grated Parmesan cheese for serving Optional.
  • Chopped parsley for garnish Adds color and freshness.

Method
 

Preparation
  1. Cook the pasta according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add diced chicken and cook until browned and cooked through, about 5-7 minutes.
Cooking
  1. Remove chicken from skillet and set aside. In the same skillet, add bell peppers and onion; sauté until softened.
  2. Stir in the Cajun seasoning, followed by heavy cream and chicken broth. Bring to a simmer.
  3. Add the cooked pasta and chicken back into the skillet; stir until well coated.
  4. Season with salt and pepper to taste.
Serving
  1. Serve hot, topped with grated Parmesan cheese and chopped parsley.

Notes

To store leftovers, let the pasta cool completely before placing it in an airtight container. It can be stored in the refrigerator for up to three days. For longer storage, consider freezing it in a freezer-safe container for up to two months. Reheat thoroughly before serving. Be careful not to overcook the chicken to keep it tender. You can add more vegetables, such as spinach or zucchini, for added nutrition and color.
