Preparation
- Cook the pasta according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add diced chicken and cook until browned and cooked through, about 5-7 minutes.
Cooking
- Remove chicken from skillet and set aside. In the same skillet, add bell peppers and onion; sauté until softened.
- Stir in the Cajun seasoning, followed by heavy cream and chicken broth. Bring to a simmer.
- Add the cooked pasta and chicken back into the skillet; stir until well coated.
- Season with salt and pepper to taste.
Serving
- Serve hot, topped with grated Parmesan cheese and chopped parsley.
Notes
To store leftovers, let the pasta cool completely before placing it in an airtight container. It can be stored in the refrigerator for up to three days.
