Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine cottage cheese, oats, almond flour, honey, vanilla extract, baking powder, and salt. Mix well until a dough forms.
- Stir in chocolate chips if using.
- Drop tablespoon-sized portions of dough onto a baking sheet lined with parchment paper.
Baking
- Bake for 12-15 minutes until edges are golden.
- Let cool before enjoying.
Notes
You can enjoy these cookies warm or at room temperature. Great on their own or with milk or coffee. Try adding peanut butter or almond butter on top for extra flavor. Store in an airtight container for 3-4 days or freeze for up to 3 months.
