Preparation
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a springform pan to form the crust. Bake for 10 minutes and let cool.
- In a large bowl, beat the cream cheese and powdered sugar until smooth. Add vanilla extract and heavy cream, mixing until thick and creamy.
- Fold in the pureed strawberries for swirls. Pour the cheesecake batter over the cooled crust.
- Bake for 50-60 minutes or until the center is set. Let it cool completely in the pan.
- For the ganache, melt chocolate chips and heavy cream together until smooth. Pour over the chilled cheesecake.
- Chill the cheesecake for at least 4 hours or overnight before serving.
Notes
Make this cheesecake a day in advance for better flavor. Cover while chilling to prevent odor absorption. Use fresh strawberries for the best presentation.
