Ingredients
  

For the crust
  • 8 oz cream cheese
  • 1 cup powdered sugar
  • 1/2 cup graham cracker crumbs
  • 2 tbsp sugar
  • 1/4 cup butter, melted
For the filling
  • 1 cup heavy cream
  • 1 tsp vanilla extract
  • 1 cup strawberries, pureed
For the ganache
  • 1 cup chocolate chips
  • 1 cup heavy cream

Method
 

Preparation
  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a springform pan to form the crust. Bake for 10 minutes and let cool.
  3. In a large bowl, beat the cream cheese and powdered sugar until smooth. Add vanilla extract and heavy cream, mixing until thick and creamy.
  4. Fold in the pureed strawberries for swirls. Pour the cheesecake batter over the cooled crust.
  5. Bake for 50-60 minutes or until the center is set. Let it cool completely in the pan.
  6. For the ganache, melt chocolate chips and heavy cream together until smooth. Pour over the chilled cheesecake.
  7. Chill the cheesecake for at least 4 hours or overnight before serving.

Notes

Make this cheesecake a day in advance for better flavor. Cover while chilling to prevent odor absorption. Use fresh strawberries for the best presentation.
