Preparation
- Place the eggs in a pot and cover them with water. Bring to a boil and let boil for 5 minutes.
- Remove the eggs from boiling water and let them cool.
- Once cool, gently crack the shells all over without peeling them.
Cooking
- In the same pot, add soy sauce, black tea, star anise, cinnamon stick, sugar, and salt to the water.
- Place the cracked eggs back into the pot and add more water if necessary to cover the eggs.
- Simmer the eggs in the mixture for at least 1 hour for deeper flavor, or longer for more intense coloring, adding water as needed.
Cooling
- Remove from heat and allow to cool.
- For best flavor, refrigerate overnight before peeling.
Notes
For a stronger flavor, let the eggs sit in the marinade for longer. Experiment with additional spices like ginger or cloves for unique flavors.
