Ingredients

  • 6 large large eggs
  • 3 tablespoons soy sauce
  • 2 tablespoons black tea leaves or 2 black tea bags
  • 1 piece star anise
  • 1 piece cinnamon stick
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • Water As needed to cover eggs

Method
 

Preparation
  1. Place the eggs in a pot and cover them with water. Bring to a boil and let boil for 5 minutes.
  2. Remove the eggs from boiling water and let them cool.
  3. Once cool, gently crack the shells all over without peeling them.
Cooking
  1. In the same pot, add soy sauce, black tea, star anise, cinnamon stick, sugar, and salt to the water.
  2. Place the cracked eggs back into the pot and add more water if necessary to cover the eggs.
  3. Simmer the eggs in the mixture for at least 1 hour for deeper flavor, or longer for more intense coloring, adding water as needed.
Cooling
  1. Remove from heat and allow to cool.
  2. For best flavor, refrigerate overnight before peeling.

Notes

For a stronger flavor, let the eggs sit in the marinade for longer. Experiment with additional spices like ginger or cloves for unique flavors.
