Preparation
- In a bowl, mix lime juice, olive oil, chili powder, minced garlic, salt, and pepper to create the marinade.
- Place the chicken breasts in the marinade, ensuring they are well coated. Allow to marinate for at least 30 minutes or up to 2 hours in the refrigerator.
Cooking
- Preheat your grill or oven to 375°F (190°C).
- If grilling, cook the chicken for about 6-8 minutes per side until fully cooked and the internal temperature reaches 165°F (75°C).
- If baking, place the marinated chicken on a baking sheet and bake for 25-30 minutes until cooked through.
Serving
- Remove from heat and let rest for a few minutes before slicing.
- Serve with rice, veggies, or in tacos. Garnish with fresh cilantro if desired.
Notes
