Ingredients
  

For the marinade
  • 2 tablespoons olive oil Adds richness to the marinade.
  • 2 tablespoons chili powder Adjust to taste for spice level.
  • 2 cloves garlic, minced Provides aromatic flavor.
  • 2 limes, juiced Freshly squeezed for best flavor.
  • to taste salt and pepper Enhances the overall flavor.
Main ingredients
  • 4 pieces chicken breasts Can substitute with tofu for a vegan version.
Optional garnish
  • to taste fresh cilantro For garnish.

Method
 

Preparation
  1. In a bowl, mix lime juice, olive oil, chili powder, minced garlic, salt, and pepper to create the marinade.
  2. Place the chicken breasts in the marinade, ensuring they are well coated. Allow to marinate for at least 30 minutes or up to 2 hours in the refrigerator.
Cooking
  1. Preheat your grill or oven to 375°F (190°C).
  2. If grilling, cook the chicken for about 6-8 minutes per side until fully cooked and the internal temperature reaches 165°F (75°C).
  3. If baking, place the marinated chicken on a baking sheet and bake for 25-30 minutes until cooked through.
Serving
  1. Remove from heat and let rest for a few minutes before slicing.
  2. Serve with rice, veggies, or in tacos. Garnish with fresh cilantro if desired.

Notes

Marinate longer for an infusion of flavor. Great for meal prep or feeding a crowd by doubling the recipe.
