Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts with salt and pepper.
  3. Heat olive oil in a skillet over medium heat and cook the chicken until golden brown on both sides, about 5-6 minutes per side.
  4. Meanwhile, grill or sauté the eggplant slices until they are tender.
Baking
  1. In a baking dish, layer the chicken, topping each piece with a slice of prosciutto, a layer of eggplant, and then mozzarella cheese.
  2. Pour marinara sauce over the top and sprinkle with Parmesan cheese.
  3. Bake in the preheated oven for 20-25 minutes, until the cheese is bubbly and golden.

Notes
