Ingredients
  

For the chicken marinade
  • 1 pound boneless, skinless chicken thighs Can substitute with chicken breast
  • 3 tablespoons olive oil
  • 2 teaspoons ground cumin
  • 2 teaspoons ground paprika
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
For serving
  • 4 pieces pita bread or wraps
  • 1 cup lettuce, shredded
  • 1 medium tomato, diced
  • 1 medium cucumber, diced
  • 1/2 medium onion, thinly sliced
  • 1/2 cup garlic sauce (or tahini sauce)

Method
 

Preparation
  1. In a bowl, combine olive oil, cumin, paprika, coriander, turmeric, garlic powder, salt, and pepper.
  2. Add chicken and coat well. Marinate for at least 30 minutes.
Cooking
  1. Preheat your grill or skillet over medium-high heat.
  2. Cook chicken for about 7-8 minutes per side or until cooked through.
  3. Remove chicken from heat and let rest for a few minutes before slicing.
Assembly
  1. Warm the pita bread.
  2. To assemble, place sliced chicken on pita, top with lettuce, tomato, cucumber, onion, and drizzle with garlic sauce.
  3. Roll or fold the pita and enjoy!

Notes

Make it ahead: Marinate the chicken overnight for even better flavor! Switch up the veggies: Toss in whatever fresh toppings you love—bell peppers or radishes make great adds. Spice level: Want more heat? Add cayenne pepper to the marinade for a fiery kick!
