Ingredients
  

Marinade
  • 3 tablespoons Olive oil
  • 4 cloves Garlic minced
  • 1 cup Yogurt can substitute sour cream or coconut yogurt for dairy-free
  • 2 tablespoons Lemon juice squeeze extra before serving for a fresh zing
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Turmeric
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
To Serve
  • 1 pound Chicken thighs or breasts for juicier results, use thighs
  • 4 pieces Pita bread toast for extra crunch
  • 2 medium Tomatoes sliced
  • 2 cups Lettuce shredded
  • 1 medium Cucumber sliced

Method
 

Preparation
  1. In a bowl, mix olive oil, garlic, yogurt, lemon juice, cumin, paprika, turmeric, salt, and pepper.
  2. Marinate the chicken in the mixture for at least 1 hour (overnight is even better).
Cooking
  1. Preheat your grill or pan on medium-high heat.
  2. Cook chicken for about 5-7 minutes per side, until fully cooked.
  3. Let the chicken rest, then slice into strips.
Serving
  1. Serve in pita bread with tomatoes, lettuce, and cucumber.
  2. Drizzle with extra garlic sauce if desired.

Notes

For a vegan option, substitute chicken with portobello mushrooms or tofu. Can prepare marinade ahead of time and store in the fridge. Store leftovers in an airtight container for 3-4 days, or freeze for up to 3 months.
