  • 2 cups cooked chicken, shredded You can use leftover rotisserie chicken.
  • 1 ripe avocado, mashed
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 4 tablespoons mayonnaise Can substitute with Greek yogurt for a healthier option.
  • Salt and pepper to taste
  • 4 slices bread of choice Ciabatta or sourdough for different flavors.
  • Butter as needed for grilling Essential for a golden crust.

Method
 

Preparation
  1. In a bowl, mix the shredded chicken, mashed avocado, mayonnaise, salt, and pepper until combined.
  2. Spread the mixture evenly onto two slices of bread.
  3. Top with shredded cheese and place the remaining bread slices on top.
  4. Butter the outsides of each sandwich.
Cooking
  1. Heat a skillet over medium heat and grill the sandwiches until golden brown and the cheese is melted, about 3-4 minutes per side.
  2. Remove from the skillet, slice in half, and serve warm.

Notes

Serve with a side salad, sweet potato fries, and a refreshing drink. For storage, keep in an airtight container in the fridge for up to three days or freeze for about one month.
