  • 2 cups cooked chicken, shredded Use rotisserie chicken for convenience.
  • 1 whole avocado, mashed Choose a ripe avocado for best flavor.
  • 1 cup shredded cheese (cheddar or mozzarella) Feel free to use other types of cheese.
  • 4 slices bread Any type of bread can be used.
  • to taste salt and pepper Season according to preference.
For Grilling
  • as needed butter or olive oil Use for grilling the sandwiches.

Method
 

Preparation
  1. In a bowl, mix the shredded chicken and mashed avocado. Season with salt and pepper.
  2. Spread the chicken and avocado mixture onto two slices of bread.
  3. Top with shredded cheese and place the other slice of bread on top.
Cooking
  1. Heat a skillet over medium heat and add some butter or olive oil.
  2. Grill the sandwiches for 3-4 minutes on each side or until golden brown and the cheese is melted.
  3. Slice and serve warm.

Notes

Pair with chips, salad, or soup. Store leftovers wrapped tightly in the refrigerator for up to 2 days. Reheat to regain crispiness.
