  • 1/2 cup granulated sugar
  • 1 cup water
  • 2 tablespoons matcha green tea powder Adjust according to your taste preference.
  • Cornstarch (for dusting) Use generously to prevent sticking.

  1. In a mixing bowl, combine sweet rice flour, sugar, and matcha powder.
  2. Gradually add water, stirring until smooth.
  3. Transfer the mixture to a microwave-safe dish and cover loosely.
  4. Microwave on high for 1 minute, then stir. Continue microwaving in 30-second increments, stirring in between, until thick and gooey (about 2 to 3 minutes total).
  5. Dust a clean surface with cornstarch, then pour the mochi mixture onto it.
  6. Allow it to cool slightly, dust your hands with cornstarch, and shape into bite-sized pieces.
  7. Let the mochi bites cool completely before serving.

Notes

For variations, you can incorporate other powdered ingredients like cocoa powder or fruit powders for different flavors. To store, keep in an airtight container at room temperature for up to two days or refrigerate to extend freshness, although chewiness may be affected. Allow to return to room temperature before serving. Can be frozen with cornstarch to prevent sticking.
