Ingredients
  

Wet Ingredients
  • 2 pieces ripe bananas, mashed Choose the ripest bananas for maximum sweetness.
  • 1/2 cup unsalted butter, melted Can substitute with coconut oil for a vegan option.
  • 1 cup brown sugar
  • 1 piece egg Can substitute with a flax egg for a vegan option.
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1 1/2 cups all-purpose flour Can substitute with a gluten-free flour blend.
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg Feel free to add other spices for more flavor.
Optional Add-ins
  • 1/2 cup chopped walnuts or chocolate chips Optional; can use your favorite nuts or dark chocolate.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix the mashed bananas and melted butter together until smooth.
  3. Add the brown sugar, egg, and vanilla extract, and mix well.
  4. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
  5. Gradually add the dry ingredients to the banana mixture, stirring until just combined.
  6. Fold in walnuts or chocolate chips if using.
Baking
  1. Scoop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  2. Bake for 12-15 minutes or until the edges are golden and a toothpick inserted in the center comes out clean.
  3. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Serve warm with cream cheese frosting or paired with vanilla ice cream. Store in an airtight container for up to 5 days.
