Ingredients

Main ingredients
  • 2 large potatoes, peeled and diced
  • 1 cup shredded cheese (cheddar or a blend)
  • 1 cup tater tots Follow package instructions for cooking
  • 4 large flour tortillas
  • 1 tablespoon olive oil For grilling
  • Salt and pepper to taste
Optional toppings
  • sour cream
  • salsa
  • green onions

Method

Preparation
  1. Preheat the oven according to the tater tots package instructions and cook them until crispy.
  2. Boil the diced potatoes in salted water until fork-tender, about 10-15 minutes. Drain and mash the potatoes, then stir in the shredded cheese until melted. Add salt and pepper to taste.
  3. Warm the flour tortillas in a skillet or microwave.
Assembly
  1. Spoon a generous portion of the cheesy potatoes onto each tortilla. Add some crispy tater tots on top.
  2. Roll the tortillas tightly into burritos. Optionally, grill them in a skillet until golden for that extra crunch.
Serving
  1. Serve with optional toppings like sour cream, salsa, or green onions.

Notes

Leftovers can be stored in the fridge for up to 3 days or frozen for up to 3 months. For reheating, use the oven for crispiness or the microwave for a quicker fix. Timing is key for perfect potato texture. Experiment with cheese options for variety.
