Ingredients
  

For the crust
  • 1.5 cups graham cracker crumbs
  • 1/3 cup sugar
  • 1/2 cup unsalted butter, melted
For the cheesecake filling
  • 4 packages cream cheese, softened 8 ounces each
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 1 teaspoon ground cinnamon
  • 1 package refrigerated cinnamon rolls

Method
 

Preparation
  1. Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.
  2. In a bowl, combine graham cracker crumbs, 1/3 cup sugar, and melted butter. Press this mixture into the bottom of the pan.
  3. In a large mixing bowl, beat the cream cheese with 1 cup sugar and vanilla extract until smooth.
  4. Add eggs, one by one, beating well after each addition.
  5. Stir in sour cream and ground cinnamon until combined.
  6. Pour the cream cheese mixture over the crust in the springform pan.
  7. Cut the cinnamon rolls into pieces and sprinkle them over the cheesecake mixture.
Baking
  1. Bake for about 55-60 minutes, or until the center is set.
  2. Allow to cool completely, then refrigerate for at least 4 hours before serving.

Notes

Letting it chill really allows the flavors to meld together; do not skip cooling time! Serve with a drizzle of caramel sauce and a side of coffee or spiced tea for a delightful experience.
