Preparation
- Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.
- In a bowl, combine graham cracker crumbs, 1/3 cup sugar, and melted butter. Press this mixture into the bottom of the pan.
- In a large mixing bowl, beat the cream cheese with 1 cup sugar and vanilla extract until smooth.
- Add eggs, one by one, beating well after each addition.
- Stir in sour cream and ground cinnamon until combined.
- Pour the cream cheese mixture over the crust in the springform pan.
- Cut the cinnamon rolls into pieces and sprinkle them over the cheesecake mixture.
Baking
- Bake for about 55-60 minutes, or until the center is set.
- Allow to cool completely, then refrigerate for at least 4 hours before serving.
Notes
Letting it chill really allows the flavors to meld together; do not skip cooling time! Serve with a drizzle of caramel sauce and a side of coffee or spiced tea for a delightful experience.
