Ingredients
  

For the Filling
  • 8 oz feta cheese, crumbled
  • 1 cup ricotta cheese
  • 2 large eggs
  • 1/4 cup chopped fresh parsley (optional) Can be omitted if not preferred
  • Salt to taste
  • Pepper to taste
For the Base
  • 1 package phyllo dough Keep covered while working to prevent drying out
  • 1/4 cup olive oil For brushing between layers

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the crumbled feta, ricotta cheese, eggs, parsley, salt, and pepper; mix until well combined.
  3. Brush a baking dish with olive oil.
Layering
  1. Lay one sheet of phyllo dough in the dish and brush with olive oil; repeat with 3-4 more sheets.
  2. Spread the cheese mixture evenly over the phyllo dough.
  3. Layer more phyllo sheets on top, brushing each with olive oil, until you’ve used up the dough.
  4. Cut the top layer into squares for easy serving.
Baking
  1. Bake for 30-40 minutes or until golden brown.
  2. Allow to cool slightly before serving.

Notes

Cheese pie can be served warm or at room temperature. It pairs well with a simple salad or soft bread. Store leftovers in an airtight container in the refrigerator for 3-4 days. For best reheating results, use the oven at 350°F (175°C).
