Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the crumbled feta, ricotta cheese, eggs, parsley, salt, and pepper; mix until well combined.
- Brush a baking dish with olive oil.
Layering
- Lay one sheet of phyllo dough in the dish and brush with olive oil; repeat with 3-4 more sheets.
- Spread the cheese mixture evenly over the phyllo dough.
- Layer more phyllo sheets on top, brushing each with olive oil, until you’ve used up the dough.
- Cut the top layer into squares for easy serving.
Baking
- Bake for 30-40 minutes or until golden brown.
- Allow to cool slightly before serving.
Notes
Cheese pie can be served warm or at room temperature. It pairs well with a simple salad or soft bread. Store leftovers in an airtight container in the refrigerator for 3-4 days. For best reheating results, use the oven at 350°F (175°C).
