Preparation
- Preheat the oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
- In a mixing bowl, combine rolled oats, flour, brown sugar, melted coconut oil, vanilla extract, and salt. Mix until combined.
- Press the oat mixture evenly into the bottom of the prepared baking dish.
- Bake for 15 minutes, then remove from the oven.
Topping
- In a saucepan, melt the vegan caramel candies over low heat until smooth. Spread the melted caramel over the baked oat layer.
- Sprinkle the chocolate chips on top of the caramel, pressing them gently into the caramel layer.
- Bake for an additional 10-15 minutes until the chocolate is melted.
- Allow to cool completely before cutting into bars.
Notes
Store in an airtight container at room temperature for up to one week or refrigerate for longer storage. Reheat in the microwave for freshness.
