  • 1 cup cherry tomatoes, halved
  • 1 cup lettuce, chopped
  • 1/2 cup pickles, sliced
  • 1/2 cup cheese, shredded (optional)
  • 1/4 cup red onion, diced
  • 1/4 cup mayonnaise or your favorite dressing You can substitute with yogurt or sour cream.

Method
 

Cooking
  1. In a skillet, cook the ground beef over medium heat until it is browned. Season with salt and pepper.
Assembling
  1. In a bowl, layer the chopped lettuce, cooked beef, cherry tomatoes, pickles, red onion, and cheese.
  2. Drizzle with mayonnaise or dressing of your choice.
  3. Serve immediately, or refrigerate for meal prep.

Notes

Store leftovers separately in airtight containers. The beef can be stored in the fridge for up to 3 days, while the veggies should be eaten within 2 days for the best taste. Feel free to mix in your favorite toppings such as avocado or jalapeƱos.
