  • 8 oz Spaghetti Or any pasta of your choice
  • 2 cups Broccoli Cut into florets
  • 1 lb Chicken thighs Boneless, skinless
  • 1 cup Light cheese For mixing into pasta
  • 2 tbsp Olive oil
  • 2 cloves Garlic Minced
  • 1 tsp Salt To taste
  • 1 tsp Pepper To taste

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken thighs with olive oil, garlic, salt, and pepper. Bake in the oven for about 25-30 minutes or until fully cooked.
  3. Meanwhile, cook the spaghetti according to package instructions.
  4. In the last 3-4 minutes of cooking, add broccoli to the boiling spaghetti water.
  5. Drain the spaghetti and broccoli, then mix with the light cheese in a large bowl.
  6. Slice the baked chicken thighs and serve on top of the spaghetti and broccoli mixture.

Notes

For an extra touch, consider garnishing with a sprinkle of parmesan or crushed red pepper flakes. Keep an eye on cooking times to avoid overcooking the chicken or pasta. Store leftovers in an airtight container in the fridge for up to 3-4 days; reheat with a splash of water to keep moist.
