Ingredients

For the dough
  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 packet instant yeast (2 1/4 tsp)
  • 1/2 tsp salt
  • 1/4 cup unsalted butter, melted
  • 1/2 cup warm milk (about 110°F)
  • 1/4 tsp vanilla extract
  • 1 large egg
For the filling and glaze
  • 1 cup fresh blueberries Can use frozen, thawed and drained
  • 1/2 cup powdered sugar
  • 2 tbsp lemon juice
  • 1 lemon zest (optional)
  • sliced almonds (optional) For garnish

Method

Preparation
  1. In a large bowl, combine flour, sugar, yeast, and salt.
  2. In another bowl, mix melted butter, warm milk, vanilla extract, and egg.
  3. Combine the wet ingredients with the dry ingredients and knead until a soft dough forms.
  4. Let the dough rise in a warm place for about 60 minutes, or until doubled in size.
  5. Meanwhile, prepare the blueberry compote by simmering blueberries in a saucepan until soft and syrupy.
Assembly
  1. Roll out the dough on a floured surface into a rectangle.
  2. Spread the blueberry compote evenly over the dough.
  3. Roll the dough tightly and slice into rolls.
  4. Place the rolls in a greased baking dish and let them rise for another 30 minutes.
Baking
  1. Preheat the oven to 350°F (175°C) and bake for 25-30 minutes or until golden brown.
Glazing
  1. For the lemon glaze, mix powdered sugar with lemon juice until smooth.
  2. Drizzle over warm rolls.
  3. Serve warm and enjoy!

Notes

Let them cool just for a minute before glazing; that warm roll will soak up the icing like a sponge. Serve with whipped cream, sliced almonds, or lemon curd for an extra treat!
