Ingredients

For the Lobster Filling
  • 1 pound freshly cooked lobster meat, chopped
  • 2 tablespoons creamy mayonnaise
  • 1 tablespoon freshly squeezed lemon juice
  • 1 tablespoon capers (finely chopped, optional) adds a briny touch
  • 1 tablespoon minced fresh chives
  • ½ teaspoon Dijon mustard
  • ¼ teaspoon fine sea salt
  • ⅛ teaspoon freshly ground black pepper
  • ¼ teaspoon smoked paprika for sprinkling on top
For the Buns
  • 4 pieces top-split brioche or buttered buns
  • 2 tablespoons high-quality salted butter

Method

Preparation
  1. If using cooked lobster tails, remove the meat and chop it into bite-sized pieces. If using pre-cooked lobster meat, skip this step.
  2. In a bowl, mix mayonnaise, lemon juice, capers, chives, Dijon mustard, salt, and black pepper until smooth.
  3. Gently fold the chopped lobster meat into the dressing until well coated.
Cooking
  1. Slice the brioche buns down the center and toast them in melted butter over low heat until golden brown.
  2. Fill each toasted bun with the lobster mixture and sprinkle with smoked paprika if desired.
Serving
  1. Serve immediately and enjoy!

Notes

Keep leftovers in an airtight container in the fridge for up to two days. For best results, serve the buns fresh. Try adding hot sauce for a spicy kick or swapping some mayo for Greek yogurt to lighten it up.
