Ingredients

For the Chicken
  • 1 pound Boneless Skinless Chicken Breasts
  • 1 cup Cornstarch
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Paprika
  • 1 cup Vegetable Oil
For the Bowl
  • 2 cups Jasmine Rice
  • 2 cups Shredded Lettuce
  • 1 cup Diced Cucumber
  • 1 cup Shredded Carrots
  • 2 stalks Chopped Green Onions
For the Sauce
  • 1/2 cup Mayonnaise
  • 3 tablespoons Sweet Chili Sauce
  • 1 tablespoon Sriracha

Method

Preparation
  1. Cut chicken breasts into bite-sized pieces. In a bowl, mix together cornstarch with salt, pepper, garlic powder, and paprika. Coat chicken pieces generously.
  2. Heat vegetable oil in a large skillet over medium-high heat. Fry chicken until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.
  3. While chicken is frying, cook jasmine rice according to package instructions. Fluff when done.
  4. In a small bowl, combine mayonnaise, sweet chili sauce, and sriracha to make the sauce. Adjust to taste.
Assembly
  1. In serving bowls, layer rice, lettuce, cucumbers, carrots, and fried chicken.
  2. Drizzle sauce over the top and sprinkle with green onions.

Notes

Don't forget to drain the chicken well to avoid sogginess. Let the chicken rest after frying for extra crispiness.
