  • 2 cups cooked rice Use white or brown rice as preferred.
  • 1 pound chicken breast, cut into bite-sized pieces You can use leftover chicken for quicker preparation.
  • 1 cup fresh greens (spinach, lettuce, or mixed greens) Customize the greens based on your preferences.
Bang Bang sauce
  • 1/2 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon Sriracha or another hot sauce Adjust the amount based on desired spice level.
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
Garnishes (optional)
  • Green onions, sliced
  • Sesame seeds

Method
 

Preparation
  1. In a bowl, mix mayonnaise, sweet chili sauce, Sriracha, soy sauce, garlic powder, salt, and pepper to create the Bang Bang sauce.
  2. In a pan, cook the chicken pieces over medium heat until crispy and cooked through.
Assembly
  1. Toss the cooked chicken in the Bang Bang sauce until evenly coated.
  2. In serving bowls, layer the cooked rice, fresh greens, and top with the Bang Bang chicken.
  3. Garnish with sliced green onions and sesame seeds if desired.
  4. Serve immediately and enjoy your healthy and delicious meal!

Notes

If you have leftovers, store them in an airtight container in the refrigerator for up to 3 days. Keep the sauce separate from the rice and greens until you are ready to eat. Feel free to add a squeeze of lime for extra flavor!
