  • 2 pieces ripe bananas, mashed Use the ripest bananas for the best flavor.
  • 1 cup sugar You can reduce sugar by up to 1/4 cup without compromising texture.
  • 1/2 cup butter, melted
  • 2 pieces eggs For a vegan version, substitute with flax eggs.
  • 1 teaspoon vanilla extract
  • 1 cup flour You can use whole wheat flour for added fiber.
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips (optional) You can substitute with nuts or dried fruit.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a baking pan.
  2. In a large bowl, combine the mashed bananas, sugar, and melted butter.
  3. Add the eggs and vanilla extract, mixing until well combined.
  4. In another bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the banana mixture, stirring until just combined.
  6. Fold in the chocolate chips, if using.
  7. Pour the batter into the prepared baking pan and spread evenly.
  8. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  9. Allow to cool before cutting into squares and serving.

Notes

Serve warm with a scoop of vanilla ice cream or drizzle with melted chocolate. Store leftovers in an airtight container in the fridge for up to 5 days or freeze for up to 3 months.
