For the Meatballs
  • 1 pound salmon fillet, skin removed
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 clove garlic, minced
  • 1 large egg
  • Salt and pepper to taste
For the Creamy Avocado Sauce
  • 1 medium avocado
  • 1/4 cup Greek yogurt or sour cream
  • 1 tablespoon lemon juice
  • Salt to taste

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a food processor, combine the salmon, breadcrumbs, Parmesan cheese, parsley, garlic, egg, salt, and pepper. Pulse until well combined.
  3. Form the mixture into meatballs and place them on the prepared baking sheet.
Cooking
  1. Bake for 15-20 minutes or until cooked through and golden.
  2. While the meatballs are baking, prepare the avocado sauce by blending the avocado, Greek yogurt, lemon juice, and salt until smooth.
Serving
  1. Serve the baked salmon meatballs with the creamy avocado sauce for dipping.

Notes

For a spicier kick, add a pinch of red pepper flakes to the mixture. If you want a lighter option, substitute breadcrumbs with rolled oats or almond flour. Make the avocado sauce ahead of time and store it in the fridge, covered to prevent browning.
