Preparation
- In a mixing bowl, combine the mashed potatoes, shredded cheese, green onions, and egg. Season with salt and pepper to taste.
- Form the mixture into small balls, about 1 inch in diameter.
- Roll each ball in breadcrumbs until coated.
- Preheat the air fryer to 375°F (190°C).
Cooking
- Place the potato balls in the air fryer basket in a single layer and spray lightly with oil.
- Cook for 10-12 minutes, or until golden and crispy, shaking the basket halfway through.

Notes
Store leftovers in an airtight container in the fridge for 3-5 days or freeze them for up to 3 months. Air fry them at 375°F for 5-7 minutes to reheat.
