- In a large pot, heat some oil over medium heat.
- Add the chopped onions and garlic; sauté until softened.
- Add the cubed pork and brown on all sides.
- Stir in the red chile sauce, cumin, oregano, salt, and pepper.
- Add chicken or beef broth and bring to a simmer.
- Cover and cook for 1.5 to 2 hours, until the pork is tender.
Notes
Serve Adobo Pork warm with tortillas, rice, or beans. It also pairs well with a side of fresh salad or steamed vegetables. For extra flavor, marinate the pork in the chile sauce for a few hours or overnight before cooking. Adjust spice levels with more or less red chile sauce. Use a meat thermometer to check that the pork reaches at least 145°F for doneness. To store, let it cool and refrigerate in an airtight container for up to 3 days, or freeze for up to 3 months.
