  • 2 lbs pork shoulder, cut into cubes Use bone-in or boneless as preferred.
  • 2 cups red chile sauce Adjust based on spice preference.
  • 1 medium onion, chopped Use yellow or white onion.
  • 4 cloves garlic, minced Fresh garlic recommended.
  • 1 tsp cumin Ground cumin for flavor.
  • 1 tsp oregano Dried oregano preferred.
  • to taste Salt and pepper Adjust according to preference.
  • 2 cups chicken or beef broth Use low-sodium for less salt.

Cooking
  1. In a large pot, heat some oil over medium heat.
  2. Add the chopped onions and garlic; sauté until softened.
  3. Add the cubed pork and brown on all sides.
  4. Stir in the red chile sauce, cumin, oregano, salt, and pepper.
  5. Add chicken or beef broth and bring to a simmer.
  6. Cover and cook for 1.5 to 2 hours, until the pork is tender.

Notes

Serve Adobo Pork warm with tortillas, rice, or beans. It also pairs well with a side of fresh salad or steamed vegetables. For extra flavor, marinate the pork in the chile sauce for a few hours or overnight before cooking. Adjust spice levels with more or less red chile sauce. Use a meat thermometer to check that the pork reaches at least 145°F for doneness. To store, let it cool and refrigerate in an airtight container for up to 3 days, or freeze for up to 3 months.
